What vegetarian foods will keep you full overnight?
I eat a lot of spinach salads with brocolli and tofu (and some other veggies mixed in) for dinner. I feel perfectly full after a meal, without feeling overstuffed.
The problem is that it doesn't last. I have to eat it right before I go to bed, and still five hours later I feel famished. The tofu just isn't cutting it.
I've tried adding rice, but that seems to be "puffed up" with water, and then "deflate" overnight, leaving me even hungrier in the morning.
I also try to avoid pastas and tomatoes, as they tend to result in acid laryngitis (acid reflux/heartburn) in my throat. And the pastas suffer the same problem as rice: puffed up by water, deflates at night.
